Southern African cuisine is full of many surprises with a lot of them being under represented amongst some of the worlds finest. What is boerewors

Boerewors (pronounced BOO-ruh-VORS) is a sausage popular across Southern Africa. The “Farmers Sausage” derives its name from the words “Boer” meaning Farmer and Wors meaning sausage.

It is made from coarsely minced meat usually beef and can be combined with minced porklamb, or both. Its uniqueness comes from the blend of spices which include toasted coriander seedblack peppernutmeg and cloves

The meat to fat ratio should never be more than 30%. This results in a very meaty sausage that has just enough fat for all the flavours to come together. It also makes the sausage soft and juicy.

How to cook boerewors

Whether you want to oven grill, pan fry or braai (bbq), boerewors is very versatile. Its best cooked in its spiral form and should not be pricked when cooking as this will release some of the juices making the sausage dry.

Some of the best cooking results can be achieved when cooking over hot coals/ wood. Most importantly, it gives the boerewors a great smokey taste and leave the skin crispy.

How to serve

Traditionally boerewors is served with sadza/ pap made from mielie-meal, a coarse-ground maize (corn) flour. You can also have it with pasta or rice and even add it as a toping on your home-made pizza.

Boerewors can be placed on a roll and eaten, hot dog style, served with a tomato and onion relish or a salad. These hot dogs are known as boerie rolls and make a great sandwich which can be served with a side of chips.
